Why do I start my day with freshly made green juice? Because I’m perfect, only eat organic and am soooooooooo much better than you.
But I do love a freshy fresh green juice. And I bet you might too. So I’m sharing my go-to green juice recipe. I swear it doesn’t count as cooking because it’s all raw! You will dirty up a few dishes though. Oh well, you’re eating your oh-so-important veggies and you’ll be fine.
I’m not a big coffee drinker and my green juice often acts as my energizer in the morning. I wake up very early for work, people LOVE to work out in the mornings, and I’ve got to be ‘on’ as soon as I get to work. We often forget vegetables are a carbohydrate and all of the complex carbohydrates in this recipe will provide plant based fuel, a multitude of vitamins and minerals and fiber AKA satiety.
Drink green juice, look fabulous, feel full.
If you could eat 2 servings of veggies in one fell swoop why wouldn’t you? This recipe tastes amazing (not like grass) and it’s easy peezy lemon (yes there’s lemon) squeezy to prepare. Plus, it’s less than $2 per serving! Oh, that’s right. It’s tasty AND healthy AND affordable. Now you have no choice but to give it a try!
Giddy Green Juice Recipe
Yields 3-4 servings
1.5 cups of water
2 handfuls of kale
2 green apples, roughly chopped, discard core/seeds
1 cucumber, cut in a few pieces
2 stalks of celery, roughly chopped
1 handful of parsley
1 inch piece of ginger (peeled)
Juice of half a lemon/1 tablespoon lemon juice
—Add ingredients in order listed into the blender, blend until smooth.
—You can keep the pulp if you prefer, for a smoother juice you can use a mesh sleeve to eliminate pulp.
—Pour in your favorite glass and enjoy!
So….that’s all I eat?! No. My typical breakfast includes:
—Glass of green juice
—1-2 boiled eggs
—Handful of strawberries
